Between the vitamin C rich red pepper and the vitamin E dense almonds, this dish is what "delicious and nutritious" is all about.
| | | to taste salt and pepper | | 1/2 cup red bell pepper(s) sliced | | 1 cup bok choy sliced | | 2 tablespoons almond(s) blanched, sliced | Spray non-stick saute pan w/vegetable cooking spray and heat pan. Add almonds and saute until lightly browned, about 1-2 minutes. Add red pepper and bok choy and continue to saute until vegetables begin to soften (3 minutes).
