Sun-Dried Tomato-Crusted Baked Halibut

This simply prepared, light fish tastes great over a bed of sauteed spinach.

 
1 cup water
2 tablespoons Sun Dried Tomatoes chopped
6 ounces halibut steak

Preheat the oven to 225 degrees, Fahrenheit. Coat the fish lightly with cooking spray. Spread 1 tablespoon sun-dried tomato onto each fillet. Place the fillets in a glass dish with water, and bake for 20 minutes.

Makes 2 servings.
